This is especially good when made ahead of time.
I use Kellogs Croutettes when I can find them. |

All the juices and oils from the chorizo ooze out while cooking, leaving the shrimp succulent and spicy. |
| Semisweet Chocolate Churros |

|
Churros, Spanish doughnuts beloved throughout the New World, easily marry with so many flavors, from chocolate to fruit sauces. Although they are traditionally shaped with a churrera, a tool with a plastic or wooden plunger that extrudes the dough into its traditional fluted shape (which is key, or they turn out hard and doughy), I recommend spooning the mixture into a cake decorators' pastry bag with a 2-inch star tip (the kind used to decorate cakes). |

This custard dessert is also known in Spain as flan, in Italy as crema caramella and in France as crhme renversie. Creme caramel is a custard that has been baked in a caramel-coated mold. When the chilled custard is turned out onto a serving plate it is automatically glazed and sauced with the caramel in the mold. |

These highly spiced meatballs are also made in North Africa, the Middle East, Turkey, and Greece and are most frequently known as kefta. In Spain, they are called Albondigas and this is Biatriz's recipe, who lives outside Seville. |

The cooked stalks may be used as celery. The uncooked stalks resemble celery in appearance except for the leaves which are more feathery, and the presence of spines on the ribs.

This is the traditional paella recipe. Substitutions won't work well. Make sure to use Spanish chorizo, not Mexican chorizo, which is a whole different thing. Some people substitute tumeric for saffron. It will not have the same taste. |
